Dried Chanterelle

Dried whole from the same forest-floor chanterelle harvest. The drying concentrates the fruity character and extends shelf life to 18 months. Ships in sealed glass. Rehydrates well in warm water or stock.
Sourcing area
Beech forest floors in the Imereti and Racha highlands of western Georgia, same sites as fresh chanterelle.
Minimum order
100g (one standard unit). Larger quantities in 500g lots.
Lead time
Stock is prepared from the July–September harvest. Contact by September to reserve from the current season. Limited quantities per batch.
Harvest variability
Dried yield depends on fresh harvest conditions. The fruity aroma concentrates significantly on drying — even a modest harvest produces excellent dried product.
Quality variability
Whole caps with some breakage during drying is normal. Colour darkens from golden to amber-gold. Apricot character persists after drying.
Storage / shelf life
Sealed glass, cool and dark. 18 months from dispatch. Rehydrates well in warm water or stock — 20 minutes.
Packaging
Sealed glass jar with heat-induction liner. Harvest date on label.
Import restrictions
Permitted in most markets. Australia and New Zealand require biosecurity inspection — allow 2–3 weeks additional lead time.
