Dried Porcini
hand-sliced, low-temperature dried, 100g
The same Boletus edulis as our fresh porcini, sliced and dried at low temperature within hours of harvest to lock in aroma and flavour. Significantly more concentrated than commercially dried porcini — a small quantity has outsized impact in a dish.
Sourcing area
Borjomi and Bakuriani highland forests, mixed oak and pine at 1,200–1,600m. Same collection zones as fresh porcini.
Minimum order
100g (one standard unit). Larger quantities available in 500g lots.
Lead time
Pre-orders for the September–October season open in August. Stock is limited each year — contact early.
Harvest variability
Wet summers produce larger caps but more variable texture after drying. Dry seasons yield smaller, denser, more intensely flavoured slices.
Quality variability
Slice thickness varies slightly by hand. Colour ranges from cream to deep brown — no correlation with quality. All batches are checked for moisture content before sealing.
Storage / shelf life
Sealed glass jar. Store in a cool, dark place. 18 months from dispatch. Reseal immediately after use.
Packaging
Shipped in a sealed glass jar with heat-induction liner. Label includes harvest date and batch number.
Import restrictions
Dried mushrooms are permitted in most markets. Australia and New Zealand require biosecurity inspection — allow 2–3 weeks additional lead time.
