Fresh Chanterelle

Cantharellus cibarius from the beech forests of the Imereti and Racha highlands. Bright golden-yellow, with the characteristic fruity-apricot scent that disappears within hours of picking. Cleaned and sorted before collection. Not shipped — freshness is the point.

Sourcing area

Beech forest floors in the Imereti and Racha highland regions of western Georgia, 800–1,400m.

Minimum order

500g fresh weight.

Lead time

Same-day collection only. Add your contact to the notification list by July — you will receive a message on harvest mornings. No advance guarantee of any specific date.

Harvest variability

Chanterelle fruiting is triggered by warm, wet conditions. In a good July–September, multiple pickings per week are possible. Dry spells produce no harvest at all.

Quality variability

Cap size varies 2–8cm. The fruity apricot scent is the key freshness indicator. Caps should be firm with undamaged gills.

Storage / shelf life

No preservation. The apricot scent is gone within hours of picking. Use within 12 hours of collection.

Packaging

Breathable mesh or paper bag. Never plastic.

Import restrictions

Fresh mushrooms cannot be exported. Collection in Tbilisi only.

Notes

These are not commercially cleaned — expect some forest debris. A brief rinse before use is all that is needed.
