Morchella esculenta from the spring forest floors of eastern Georgia, appearing for a narrow 3–4 week window each year. Among the most prized fungi in European cooking and almost unknown as a Georgian export. Available for collection in Tbilisi on harvest day only.

Sourcing area

Spring forest floors in eastern Georgia — primarily Kakheti region foothills and the Alazani river valley woodland margins.

Minimum order

250g fresh weight.

Lead time

Morel season is 3–4 weeks in April–May. Add your contact to the pre-season list by March. You will receive same-day notification when harvest begins.

Harvest variability

Highly variable. The fruiting window shifts by 1–3 weeks depending on winter snowmelt and spring temperature. In some years, the season barely opens.

Quality variability

Cap size ranges 3–10cm. All specimens selected for clean honeycomb structure with no collapse. Flavour is consistent — this variety does not disappoint.

Storage / shelf life

No preservation. Use within 12 hours. Morels must be cooked — do not eat raw.

Packaging

Breathable paper bag or mesh. Never plastic.

Import restrictions

Fresh mushrooms cannot be exported internationally. Tbilisi collection only.

Notes

Morel season is the most limited offering on this list. If you miss the window, there is no substitute until next spring.
