July – September

Wild Mountain Mint

dried leaf and stem

Collected from high-altitude meadows above 1,800m. Intensely aromatic — far more concentrated than cultivated mint. Used across the Caucasus in teas, cooking, and home remedies.

i

August – October

Wild Raspberry

branches with leaves and berries

Cut from forest-edge thickets at elevation. Branches arrive with leaves and dried berries intact. Both the leaves and berries carry distinct medicinal value and are used together in traditional Georgian teas.

i

September – November

Sea Buckthorn

berries and branches

Harvested from thorny shrubs along mountain river valleys. The bright orange berries are exceptionally high in vitamin C and have a sharp, distinctive flavour. Branches are included.

i

June – July

Linden

flowers and leaves

Picked at the height of bloom from old-growth linden groves in the foothills. Flower clusters and young leaves are dried together. Mild, faintly sweet, and widely used as a calming tea.

i

July – September

Wild Thyme

dried leaf and stem

Grows low along rocky ridgelines and sun-facing southern slopes. Leaves are smaller than commercial thyme but the essential oil content is considerably higher. Strong culinary and medicinal character.

i

May – June

Elderflower

dried flower clusters

Gathered from wild elder trees growing in mountain clearings and forest margins. Flower heads are picked at full bloom and dried slowly at low temperature. Used in teas, syrups, and infusions.

i

August – September

Wild Blackberry

leaves and berries

Forest-edge blackberry harvested for both leaves and the small, concentrated berries. The leaves carry tannins and are widely used in Georgian herbal teas; the berries are dried whole.

i

June – August

Chamomile

dried flower heads

Wild chamomile from open mountain fields, collected by hand at peak bloom. Flowers are smaller than farmed varieties but noticeably more aromatic. Dried immediately after picking.
